Think ice cream is a just-for-summer indulgence? Not so fast. Yes, it's cold outside. The chilly outdoor temperature doesn't make ice cream's sweet, creamy deliciousness any less craveworthy or satisfying! Just make sure your dessert at least pretends to be seasonally appropriate, with warm toppings like fruit or hot fudge, a tasty sidecar like a brownie or slice of cake, or an effervescent accompaniment like soda (whether you pour it over or just drink it alongside). There's no reason to give up your favorite frozen treat just because there's snow on the ground! ice cream – Big Y no-stick cooking spray 2 cups pancake & waffle mix 1 Big Y large white egg 1 1 ⁄ 3 cups Big Y milk 2 Tbsp. vegetable oil 1 tsp. Big Y ground cinnamon ½ tsp. ground nutmeg 2 pints Gifford's vanilla ice cream 9 Tbsp. wild blueberry preserves 1. Coat waffle iron with cooking spray and preheat. 2. In a medium bowl, combine pancake & waffle mix, egg, milk, oil, cinnamon and nutmeg; mix well. 3. Ladle onto hot waffle iron and cook per waffle iron directions; remove and cut into 4 squares. Repeat until you have 12 waffles in all. 4. Using sharp scissors, cut a slit down the side of the ice cream containers and peel it away, leaving just the ice cream. Lay ice cream on its side and with a sharp knife, slice it into 6, ½-inch rounds. Place a waffle on top of the ice cream round and cut ice cream into a square. 5. Top 6 waffles with a slice of ice cream. Spread 1½ tablespoons preserves over inside of other waffles and place on ice cream to form sandwiches. Serve immediately.
